Banana Oat Muffins

Ingredients:

  • 1 cup rolled oats

  • 1 cup mashed ripe bananas

  • 1/2 cup unsweetened almond milk

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup chopped nuts (optional)


Instructions:

  • Preheat the oven to 350°F (180°C) and grease a muffin tin.

  • In a medium bowl, mix together the oats, mashed bananas, almond milk, egg, and vanilla extract.

  • In a separate small bowl, mix together the baking powder, baking soda, and salt.

  • Add the dry ingredients to the wet ingredients and mix until just combined.

  • Fold in the chopped nuts, if using.

  • Divide the batter evenly between the muffin cups.

  • Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  • Remove from the oven and let cool before serving.


Note: You can add some chocolate chips, nuts, or dried fruit to make it more tasty.
